Avocado toast, mango chutney with spices and raw vegetables
- 1 ripe avocado
- 2 slices of country bread
- 2 tablespoons olive oil
- 100 g of Mango & Spices chutney
- 1 shallot
- 1 lime
- Some cherry tomatoes
- Some radishes
- ½ red onion
- A handful of squash seeds
- Some coriander leaves
- Salt / pepper / paprika / cumin / ginger
Preheat the oven in grill mode.
Brush bread slices with olive oil, bake and brown.
Cut the tomatoes in half, slice the red onion and slice the radishes in the length.Reserve cool.
Mince the shallot, mash the avocado and season (salt, pepper, paprika, cumin, ginger).
Spread a generous layer of mango chutney on the still hot bread, guacamole and finish with the raw vegetables, squash seeds and coriander. Sprinkle with olive oil and serve immediately.
