Above all, once opened, keep the jar in the refrigerator. It can be stored easily for a month or two. As long as no mould forms on the surface, no worries! As long as the jar is not opened, you can keep it at room temperature.
The origin of the fruit depends on the time of harvest to ensure that the fruit is harvested when it is ripe. We favour the provenance of France. Every year, we meet local producers or farmers' cooperatives, taste the fruits and retain the best: apricots, pears, plums, figs... For citrus fruits, we work with fruits from the Mediterranean basin (France, Spain), mainly organic because we use peels. As for red fruits, we also work with a local company created by French producers that promotes seasonal complementarity between the different regions of France and Europe while respecting the economic, social and environmental aspects of the fruit producer's profession. This allows us to guarantee quality fruit to our customers while ensuring a fair remuneration to producers.
The total sugar content corresponds to the sugar content after cooking and takes into account the sugar naturally present in the fruit as well as the added sugar.
Jam is a mixture of fruit pulp or purée, sugar and water, the consistency of which is gelled. This name is regulated in France (minimum 35g of fruit per 100g of ingredients and a total sugar level of at least 55%). The search for a less sweet taste and a more pronounced fruity sensation lead more and more to increase the proportion of fruit and to decrease that of sugar, even if it does not fit into the criteria of the name "jam". We will then speak of "fruit preparations", whose use remains that of jam, but with better taste qualities! This is the reason why some of our recipes are not entitled to the name of "jam".
For our conventional range, we work with white sugar, which is the most neutral to preserve the taste and colour of the fruit. And our workshop, in the Hauts de France, is located in the heart of the cultural area! On the other hand, for our organic range, we use Brazilian cane sugar from fair trade.
Pectin is an organic substance that has gelling properties necessary for jams. We use natural fruit pectin from lemon. The amount of pectin varies according to the original concentration of the fruit and its level of maturity. To promote its action, a little lemon juice is added, which is why you will regularly find this fruit in the list of ingredients.
